Bimber

Bimber is an English distillery that opened in West London in 2015. One of only a few distilleries in the city, it’s named after the Polish word for moonshine, which is a reference to the founder’s, Dariusz Plazewski’s, heritage. 

Despite its relatively young age, Bimber has already developed a reputation for its high-quality spirits and artisanal approach. They create both whisky and London Dry Gin, but it’s the former that they are best known for. 

The inaugural single malt was released in 2019, when Bimber The First Release hit the market. It had spent three years in Pedro Ximenez casks, although subsequent batch releases have used bourbon, Oloroso and wine casks. Away from single malt, Bimber Apogee XII 12 Year Old is a blended whisky that marries together Highland and Speyside whiskies, before maturing in ex-bourbon barrels that previously held the distillery’s single malt.
