Daftmill
Opened in 2005 by the Cuthbery family, Daftmill is a relatively new Scotch whisky distillery based in the Lowland region of Fife – just to the north of Edinburgh. It’s located on an operating farm and production is seasonal, limited to just the summer and winter.
Daftmill uses traditional pot stills and local barley. The whisky is predominantly matured in ex-bourbon barrels, but sherry and rum casks have also been used. Their first official bottling wasn’t released until 2018.
The distillery produces light single malts with floral and fruity notes. This is a classic Lowland and we can’t wait to see future releases.
