Milk & Honey

Milk & Honey was founded in Tel Aviv in 2012 and is Israel’s first whisky distillery. Due to the Mediterranean climate, the maturation process is accelerated, meaning that their whiskies age more than twice as fast as Scotch. 

After initially releasing gins and new make spirit, they finally launched their first single malt whisky in 2019. The Classic Single Malt has been aged for at least three years in ex-bourbon and virgin oak casks, before spending a finishing period in red wine barrels. 

Away from their classic expression, the Elements and Apex ranges saw the distillery experiment with different cask types, such as Rum, Sherry and Ex-Islay whisky – they even matured one in the Dead Sea
