To be legally called a bourbon, the drink must be made from at least 51% corn, distilled in the US, aged in new charred oak barrels, and cannot contain any colourings or additives. The mash must also be distilled at no less than 80% ABV, and aged until it is no more than 62.5% ABV. All other varieties are referred to as American whisky.
