Filey Bay STR Wine Cask Single Malt Whisky

For the third instalment of their annual Autumn Sherry Cask Reserve series, Whisky Director Joe expertly combined the contents of five Fino sherry casks from the warehouse. Among these casks, three were filled with our Pot distillate, while the other two held the lighter column distillate. Fino sherry, crafted from palomino grapes, is inherently light, dry, and delicate. Throughout the maturation process, the distinct characteristics of these two distillate types shone through. The heavier and oilier pot distillate embraced the spicy, ginger notes of the casks, while the fruitier and lighter column distillate allowed the sweet, honey flavours to take the spotlight. This release is limited to just 2,000 bottles, making it a truly exclusive offering.
