Calvados

Hailing from the Normandy region of France, Calvados is a type of brandy that’s made from fermented apples.

The production of calvados dates back to the 16th century and involves distilling cider before ageing the spirit in oak barrels. Any of more than 200 varieties of apples may be used in the process, including sweet, tart and bitter varieties. 

There are different grades of Calvados, depending on the age. VS, VSOP and XO are the traditional classifications used, which have been aged for two years, four years and six years respectively. Some of the most popular brands include Boulard, Busnel and Dupont.
