The traditional, predominant flavours of absinthe are fennel, anise, and liquorice, make it an intriguing and exciting spirit that’s sure to spice up any cocktail hour. We stock a variety of flavours, colours, and strengths, including blue, green, and black absinthe, to name just a few.

With a rich and incredibly long history, early medicinal forms of absinthe have been documented as far back as the Bible and it was known in some historical texts as ‘the green fairy’ (la fée verte). While these early forms used very high concentrations of wormwood, our modern recipes make absinthe by redistilling neutral alcohol with some wormwood and other natural botanicals to give it its characteristic green or blue colours.

Despite the urban myths, modern absinthe will not make you hallucinate! It is, however, typically much stronger than other spirits like vodka, gin, or tequila: absinthe can range anywhere from 50–80% ABV, or even 90–100% in some American varieties. It should therefore be enjoyed diluted, either with water, mixers like tonic or soda, or used in very small measures to add an aniseed flavour to your favourite cocktail.
