Nestled in the heart of the Lowlands in Fife, Daftmill was founded by the Cuthbert family in 2005, transforming their centuries-old farm into a distillery with a focus on seasonal, terroir-driven whisky. The distillery uses barley grown exclusively on the family’s farmland, harvested, malted, and distilled in line with the farming calendar. Daftmill's production remains remarkably small, often amounting to just 100 casks per year, making their whiskies some of the most sought-after in the Scotch world. This Winter 2010 bottling was distilled using Publican barley grown in the 43-acre field on the Cuthbert family farm, harvested in late August 2009. The whisky was crafted from a combination of 25 first-fill ex-bourbon barrels, filled between November and December 2010, and then left to mature in the distillery’s traditional dunnage warehouse. This limited release is one of only 6,250 bottles and is presented all natural colour, at 46%abv.
