Daftmill 2011Summer Release

Nestled in the heart of Fife, Daftmill is a true farm-to-bottle operation, owned and operated by the Cuthbert family. This Lowland distillery is notable not just for its small-scale production, which sometimes totals as few as 100 casks per year, but also for its seasonal operation. Distilling occurs only during the quieter farming periods of midsummer and winter, allowing Francis Cuthbert to dedicate the rest of the year to cultivating the malting barley on the estate. The Publican variety of barley used for this particular release was grown on the estate’s 43-acre field. After drying and storage on the farm, it was malted in Alloa during the summer of 2010. The whisky was then aged in twenty-seven first-fill bourbon barrels from Clermont Springs distillery in Kentucky, which rested in the upper level of Daftmill’s dunnage warehouse until bottling in September 2023. One of 6250 bottles, this release is presented all natural colour, unchillfiltered at 46%abv.
