Daftmill Distillery, nestled near Cupar in Fife, holds a special place in Scotland's whisky revival. As one of only seventeen operational Lowland distilleries currently releasing whisky, it paved the way for a new generation of distillers when it was commissioned in 2004. Production began in earnest in 2005, making Daftmill the first malt whisky distillery in Fife since Auchertool's closure in 1927. This Winter 2011 Release embodies the farm-to-bottle ethos that defines Daftmill. Owned and operated by the Cuthbert family, the distillery only produces whisky during the quieter periods of the farming calendar—midsummer and winter—resulting in small-scale, high-quality production. The barley for this release, of the variety Publican, was grown in the 43-acre field on the Daftmill estate. It was harvested by John and Sandy Cuthbert on the 28th and 29th of August 2009, then dried and stored on-site before being malted in Alloa during the summer of 2010.
The whisky was distilled from twenty-seven first-fill ex-bourbon barrels, filled in December 2011. These casks were matured in the upper level of Daftmill's dunnage warehouse, benefitting from the unique aging environment, before being bottled in 2024 at an approachable 46% ABV.
