While the French monk Dom Pérignon might be credited with inventing champagne, an Englishman from the Cotswolds actually documented the production of sparkling wine thirty years earlier. In 1662, scientist Christopher Merrett was the first person to describe the process of adding sugar and performing a secondary fermentation of still wine to create the bottles of bubbly we know and love today.
