Although there is no official definition, the difference between dark rum and white rum is the maturation process.  Dark rum is aged longer, sometimes decades, and is kept in charred oak barrels. It may then be blended with other rums to achieve a desired character. Caramel is also sometimes added to ensure that deep hue.

The result is a sweet and sticky spirit with deliciously deep notes of vanilla, molasses and subtle spice. This flavour makes it ideal for sipping neat, but it’s also popular in cocktails such as a Dark and Stormy or Caribbean Rum Punch.
